Grilled Tofurky and Daiya Cheese Sandwich

This is a very simple, absolutely delicious little sandwich. It is my favorite vegan version of a grilled cheese sandwich because it gives the bread the same crispy butterieness along with the same melted cheesieness that we all love and miss! Feel free to add whatever other fixings you like, such as tomatoes, spinach, or onions.

Again, get creative with what you put in the sandwich! Some ideas are fresh basil leaves, fresh cilantro leaves, salsa, avocado slices, different flavors of vegan cheese, green peppers…The list goes on and on!

  1. Pre-heat stove on medium high. Allow butter to soften a bit before spreading it on the bread.
  2. Using 1/2 of the teaspoon for each, spread butter onto each slice of bread. Place bread butter-down on a plate.
  3. Place tofurky slices onto only one slice of the bread. Tip: You don't have to lay them flat: Folding them over on top of each other will add a nice meaty texture to your sandwich.
  4. Sprinkle, or if using wedge slices, place, cheese over the tofurky.
  5. Place other slice of bread over this one (the one with the cheese and tofurky). Using a spatula, press down on the sandwich to squish all the ingredients together so nothing falls out.
  6. Place into skillet. Let the first side of the sandwich turn golden brown before flipping. It should take about 4-5 minutes. However, it is a good idea to, using the spatula, lift a little corner of the sandwich up to see its progress--about every minute or so. That way you will have a good idea of when to flip it. This will help prevent burning.
  7. When finished, serve with ketchup and enjoy!
