Quesodaiyas

The first time I made these, I was so shocked by how delicious they turned out that I immediately grabbed my camera and snapped a shot of them because I knew right then and there that I would have to tell someone about them! This is one of my favorite vegan comfort foods, especially topped with fresh guac and salsa. If you have any on hand, this goes great with a tall glass of ice cold lemonade.

Instructions

  1. Over one tortilla, add the cheese shredds. Try to pile them around the middle, in order to keep the shredds from falling out when you flip it.
  2. Place wedge slices over the shredds. Try to distribute them evenly, in order to maximize cheesiness.
  3. Place other tortilla over the one with cheese. Pack down so everything gets squished together.
  4. Place on a skillet at medium high and heat both sides for about 2 and a half minutes. Make sure you don't burn the tortillas.
  5. Cut into quarters and serve with salsa or guacamole!
