Curry Tofu Scramble

This is a very simple, very tasty tofu scramble. You can eat it with pretty much any meal–in a breakfast burrito, in a salad, in a curry. I like it best as a side with another vegetable curry because it contrasts the soupiness of the curry well with a nice chewy texture. In any dish, it lends a zingy and exotic flavor to your meal. 😀

  1. Drain your tofu. In a skillet, heat the oil for a few minutes on medium heat. Crumble in the tofu and cook until the tofu crumbles are brown and crispy-looking (whatever that means).
  2. Add in all the spices and stir very well.
  3. Serve with naan bread and a vegetable curry to complete your indian-themed meal!
